FIESTA EN JALISCO restaurants were established in 1994 by Alfonso Pimienta, Juan Mario Pimienta, Xavier Lepe and Sacarias Guitron, four cousins and good friends from their early childhood years. Their family roots are from AYUTLA, a small town in the Mexican state of Jalisco which is located south of Guadalajara and east of Puerto Vallarta.
They decided to test their luck by opening their own business after Alfonso, Juan Mario and Sacarias had worked in the restaurant industry for many years. They worked their way up the ladder by first working as dishwashers, bus-boys, servers and cooks until they eventually became restaurant managers. The other partner Xavier is a teacher and helps out in an advising role. Xavier’s parents are now retired but prior to that they owned restaurants in Chicago and in 1976 they were part owners and managers of one of the first Mexican restaurants in Seattle.
The first opportunity presented itself in the small town of Orofino, Idaho and that is where the first FIESTA EN JALISCO restaurant was established on June 3, 1994. From that day until today that restaurant has been managed by Mr. Sacarias Guitron and his wife Lilia.
Currently there are 11 restaurants FIESTA EN JALISCO which include: Orofino and Salmon, Idaho; Ellensburg and Dayton, Washington; and 7 stores in the state of Montana which are located in Great Falls, Hamilton, Livingston, and 2 in both Missoula and Polson. Each of these restaurants is looked after by a partner/manager that is a family member of one of the founding members.
